A hand-forged and hand-hammered carbon steel kitchen knife made in South Korea following old-world techniques and featuring a traditional minimalistic design - high quality, functional and a true work of art.
This medium-large all purpose kitchen knife does it all and could be used to work through the preparation of an entire recipe from chopping garlic to slicing a tough root vegetable.
The knive undergoes water treatment to enhance the cutting power and longevity compared to oil. The blade hardness should be approximately 57-62 degrees. While high-end knives often exceed 60 degrees, a Master Shin knife focuses on achieving a balance between strength and flexibility. Exceeding 60 degrees can lead to blade breakage.
Handling & care:
- Do not cut frozen food
- Sharpen with wet stone not sharpening steel
- Do not use on very hard surfaces, wooden cutting boards are good
- Do not put into dishwasher
- If knife gets stuck while using, pull it out vertically and not side-ways
When cared for properly, the knife will serve you well for decades to come
