A hand-forged and hand-hammered carbon steel knife made in South Korea following old-world techniques and featuring a traditional minimalistic design - high quality, functional and a true work of art.

This flat blade paring knife is just the right size for zesting citrus, peeling a pear, de-veining shrimp or other tight tasks a recipe requests of you - but lager than it's brother and can also be used to chop ginger, garlic or other small produce.

The knive undergoes water treatment to enhance the cutting power and longevity compared to oil. The blade hardness should be approximately 57-62 degrees. While high-end knives often exceed 60 degrees, a Master Shin knife focuses on achieving a balance between strength and flexibility. Exceeding 60 degrees can lead to blade breakage.

Handling & care:

  • Do not cut frozen food
  • Sharpen with wet stone not sharpening steel
  • Do not use on very hard surfaces, wooden cutting boards are good
  • Do not put into dishwasher
  • If knife gets stuck while using, pull it out vertically and not side-way

When cared for properly, the knife will serve you well for decades to come
